RECIPE

World Famous N'awlins Creole Gumbo

3 large boneless skinless chicken breast halves
World Famous N'awlins Cajun Season Y'all
1/4 cup vegetable oil
1 pound Andouille smoked sausage or any premium smoked sausage, cut into 1/4-inch slices
1/2 cup all purpose flour
5 tablespoons butter
1 large onion, chopped finely
8 cloves garlic minced
1 green bell pepper, seeded and chopped finely
3 stalks celery chopped finely
1/4 cup Worcestershire sauce
1/4 bunch flat leaf parsley, stems and leaves, coarsely chopped, plus chopped leaves for garnish
4 cups hot water
5 beef bouillon cubes or equivalent
4 green onions, sliced, white and green parts
1/2 pound large whole shrimp
1 tablespoon World Famous N'awlins File` powder


Peel the shrimp and set aside the bodies. Put the shrimp heads and shells in the 4 cups of water and bring to boil to make shrimp stock. Simmer for 20 minutes, then strain out the heads and shells. Separately, season the chicken with World Famous N'awlins Cajun Season Y'all. Heat the oil in a non-stick pan over medium-high heat. Cook the chicken until browned on both sides and remove. Add the sausage and cook until browned, then remove. Sprinkle the flour over the oil, add 2 tablespoons of butter and cook over medium heat, stirring constantly, until brown, about 10 minutes. This makes a roux. Let the roux cool down, then slowly return to a low heat and melt the remaining 3 tablespoons of butter. Add the onion, garlic, green pepper and celery and cook for 10 minutes. Add Worcestershire sauce and  World Famous N'awlins Cajun Season Y'all to taste and the 1/4 bunch parsley. Simmer and stir frequently for 10 minutes. Add 4 cups shrimp stock and bouillon cubes, whisking constantly. Add the chicken, shrimp, and sausage. Bring to a boil, then reduce the heat, cover, and simmer for 45 minutes. Cover and simmer for 1 hour. Just before serving add the green onions, shrimp, file` powder and chopped parsley. Sprinkle World Famous N'awlins file` on the gumbo at the table and stir to thicken and flavor to taste.

    This seasoning is so good! We use it on everything. I ordered it by mail and it arrived in about 3-4 weeks to Edmonton, Canada. I was a little worried that it would not arrive but it did. So glad to be able to continue to enjoy a taste of New Orleans.

    I originally purchased the seasoning on a visit to see my husband's family in New Orleans. We live in NJ now . My husband grew up in New Orleans and this is his favorite seasoning!! I order it for him online now so he can have it between visits. It is just the right combination of spices and not too salty. We give it 2 thumbs up!!

    I have ordered 6-15 oz bottles of Cajun Season Y'all since returning from my vacation to NOLA back in June 2014. My family absolutely LOVES this stuff and will NOT use anything else. We are addicted to it. No other seasoning is necessary!

    In 2010, my wife and I visited New Orleans. One day we ate shrimp etouffe and red beans and rice in the French Market. They had a seasoning called French Market N'awlins Season Y'all. Since that day, I have tried to make sure that we have this seasoning mix in our house. It is the absolute best seasoning mix I have ever had. Since returning home to PA (just outside of Philly), I have made sure that we have some in the house. If I could order it by the bucket, I probably would. It replaces salt and pepper in almost everything I cook. I am one to combine available ingredients and create my own mixes, but this was so good, I have to order it directly from the source. There is no replacing or substituting the original. It is that good. I can't stress enough how good this is. I just ordered three more containers of it, because it is that good. As a point of reference, I create my own taco seasoning mix because I don't like what is available in the supermarkets (and I have three kids). Again, this is so good, there is no substituting the original.
